Likes & Favorites: Cats win it all!

It’s 9:34 p.m., Monday night–exactly one week after Villanova won the NCAA National Championship. One week ago, I was probably hyperventilating at this point in the game, even though it was only 4 minutes into the first half.

What have I been liked & favorited all week? Villanova EVERYTHING. I’ve been riding this championship high all week long. Hell, I’ll probably ride it for the rest of the year. For one week, I watched replays, read articles and incessantly liked social media posts about everything and anything remotely related to the Cats. Everyone did. That’s what made it so much more fun.

Well, Nova aside, there were some other things I’ve enjoyed things I enjoyed this week (believe it or not). Here’s what else I’ve been liking & favoriting.

Stepping into Spring (for cheap)

Who doesn’t love new sandals? I was at Target the other weekend (where else does a 20-something spend their free time?) and bought two ~fabulous~ pairs of shoes, perfect for spring. Come on, you know you need new wedges.

Easiest Meal Prep Ever: Pasta Salad

Want to have lunch/dinners for the whole week? Well I have a recipe that literally ANYONE can make as long as you know how to cut veggies & cook pasta. It’s really that simple.

Spring Pasta Salad

{Ingredients: 1 pepper (any color) | 1 cucumber | grape tomatoes (or regular ones) | carrots | red or yellow onion | pepperoni slices | mozzarella cheese sticks | box of pasta (any kind) | Good Seasons Italian Dressing mix}

Prep time: 15 minutes | Cook time: 15 minutes

  1. Bring some water to a boil. Throw in your pasta and cook.
  2. Cut up alllll your veggies. If you want to avoid crying while cutting your onion, check out this video (changes everything)
  3. Throw all your chopped veggies in a bowl. Rip up your pepperoni slices. Add it to the bowl. Cut up your cheese sticks. Into the bowl.
  4. Strain your pasta and let it cool completely.
  5. Make your dressing (just follow the instructions on the packet!) Pro tip: Add a bit of garlic powder and a tiny bit of sugar for a nice flavor.
  6. Combine pasta and the rest of your ingredients in the bowl. Drizzle the dressing over everything. Refrigerate.

That’s it! Best part is, it gets better the longer it sits. Hello, leftovers all week long!

THE Guide to Adulting

I thought it didn’t exist, but apparently it does. My friend Kara told me about a book called, “The Defining Decade.” It’s basically about how to make the most out of your 20’s from a psychologist who specializes in this type of thing. I’ve gotten through a few chapters and I like it so far. I’ll let you know how the rest goes. {You can get it from Barnes & Noble here.}
